I really disliked transforming the Classics deluxe-sized Galvatron.

Hardest would be TFTM Concept 'Bee, if only for the fact that his hood automorph got stuck in robot mode and stayed that way for about three months. Aside from him, RotF Sideswipe and Universe Triceradon are also what I think of as hard. Sideswipe because he's got a lot of stuff to pull out and stick in, and Triceradon because the bits of dinosaur go wonky in beast mode if you don't put his robot bits just the right way.
Easiest would be RotF Jetfire, or indeed most of the Legends. During the HSC, I fiddled with them as I revised, managing to transform them without even looking at them for the most part.

Dude, "TFTM" stands for "Transformers The Movie," whereas I think you're referring to the Transformers movie. 
I personally really like TF moofie Deluxe Bumblebee (both 70s and Concept). I think they're both a good balance of being complex enough to provide some challenge, but not too challenging that you end up spending an hour or so transforming them and yelling every swear word known to you (or throwing the toy across the room as I did when I first tried to transform Big Convoy (-_-)). I find them to be nice fun toys.
My only real gripe with Concept Bumblebee are the shoulder panels which pop off too easily.
