I've got a boatload of TV shows and movies on my computer as MP4 files, do any of you know a fast simple way to change the metadata on them? I've looked online but can't find anything that is suitable.

VLC Media player dude, you'll have to do each individual file - A pain in the ass I know, but it'll allow you to do it rather easily.
Here's a screenie VLC step-by-step:

If you're not looking for bulk change, try using AudioShell. It's a free Windows Explorer shell extension. Download and screenshots is here -> http://www.softpointer.com/AudioShell.htm
If you want a good read on MP4 tags and iTunes, try this -> http://atomicparsley.sourceforge.net/mpeg-4files.html
You should be able to use the properties option in any Windows Folder view to do it too. (At least in Vista for sure)
