    Hah! After far too much time messing about I finally found the shooting mode that would allow me to control the aperture size. To great effect!

    Only downside I found to narrowing the aperture was that the brightness of the image went way down, so I had to employ flash

    if you're using a Tripod you can also increase exposure time to let more light in.
