It can also depend on which planes are leaving HK for Australia that have space available. To the HK postal service, if you aren't paying for a guaranteed delivery timeframe, they'll stick it on any plane that is heading for Australia, and then it becomes Australia Post's problem to relocate it to the city/state on the address. And as we've seen, once it gets to Australia, our postal service can take its time to send stuff interstate.
